With the holiday summer season now in full swing, many of us are opening our homes to friends, extended family, and visitors returning home for the festivities.
And truly — Gippsland is one of the best places to be at this time of year.
From the coast to the high country, we are surrounded by exceptional local produce.
Fresh seafood from our local fishers, high-quality meats from trusted butchers, and vibrant farm-gate fruit and vegetables — Gippsland really does have it all. And I believe that’s something worth celebrating.
Yet even with all this abundance, hosting can still feel overwhelming when you’re juggling a full house, busy schedules, and the expectations that often come with the holiday season.
One reminder I regularly give my clients (and myself) is this: planning is the key to successful, stress-free hosting.
Being open with family or guests can instantly take the pressure off.
Ask people to bring a dish, help with preparation, or organise drinks. A little communication can transform hosting from stressful to genuinely enjoyable.
Today, I’m sharing a few simple festive hosting strategies, along with some of my favourite crowd-pleasing salads and sides that can be prepared ahead of time.
Feel free to print this and pop it on the fridge — a small step that can really lighten the load during the holidays.
Celebrating local: Gippsland’s
festive advantage
When entertaining, consider supporting local — the flavour difference truly speaks for itself.
– Fresh seafood from local fishers or your nearest Fish Co-Op
– Quality meats from family-run
Gippsland butchers
– Seasonal produce from small grocers, markets, and farm gates
– And of course, don’t forget to pair your meal with some of Gippsland’s finest wines, ciders, spirits, or ales
From cool-climate chardonnays to crisp ciders and handcrafted gins, our region offers something for every palate.
Once you’ve sourced a few quality basics, the rest of your menu comes together naturally.
My go-to summer salads and sides
These dishes are simple, vibrant and reliably loved by guests:
1. Spiced roasted cauliflower salad
Roast cauliflower with dukkah or warm spices. Cool slightly, then serve on rocket with pomegranate and a mint yoghurt dressing.
2. Warm roasted sweet potato, feta and herbs
Roast sweet potato and combine with toasted nuts, feta, and fresh herbs. Delicious warm or at room temperature.
3. Platters (your secret weapon)
Crudités, cheeses, cured meats, olives, nuts, and dips — effortless, colourful and always devoured.
4. Mixed tomato summer salad served
with burrata
Heirloom or ripe tomatoes with Burrata placed in the centre served with basil, oregano, good olive oil, and a splash of vinegar. Fresh, simple, and low stress.
5. Add pulses for bulk, balance and gut health
Lentils, roasted chickpeas, or butter/cannellini beans add fibre, texture, and nourishment
to any salad.
6. Herb-butter butterfly chicken
A butterflied chicken rubbed with herbed butter, served with a lemon-caper potato salad (olive-oil based rather than mayo).
7. Grilled stone fruit salad
Lightly grilled peaches or nectarines tossed through salads for a beautiful sweet-savoury highlight.
8. Shaved cabbage, fennel and pecorino
Crunchy, refreshing and elegant with a
simple vinaigrette.
And yes – a sweet finish matters.
A classic pavlova never fails — topped with fresh local berries or in-season mangoes for a bright, festive ending.
Hosting doesn’t need to feel like a marathon.
With a little planning, a few reliable dishes,
and the incredible produce Gippsland has to offer, your festive gatherings can feel joyful
— not stressful.
